Pastry Chef (Overnight, to grow our Bakery Department)

Feast & Fettle is seeking a PASTRY CHEF to be a leader within our growing production kitchen facility in East Providence. Bakery production takes place overnight; this is a 3rd shift position, with flexibility for one day shift per week to allow for collaboration with the R&D and Production teams. Typical hours: 9pm-5am, Thursday-Monday.

What are the key responsibilities of the Pastry Chef?

Each day of the weekly production cycle, your Executive Chef will rely on you and your team to facilitate the preparation of our bakery menu items with the highest possible quality, level of precision, and food safety for home delivery to our members.

This work includes the responsibility to:

  • Direct and execute the planning, preparation, and production of a set of recipes each week
  • Assist in developing new bakery products and recipes to keep our offerings fresh and exciting.
  • Assist the Executive Chef in all aspects of bakery operations, including production, and staff supervision.
  • Ensure that all bakery products meet our quality standards and are presented attractively.
  • Train and mentor bakery staff in pastry techniques and bakery management best practices.
  • Supervise, mentor and work alongside a team of 5-8 Production Bakers
  • Ensure consistent, high quality standards are being maintained
  • Ensure all weights are being recorded for all recipes being executed by Bakers
  • Taste all product prior to sending to Cold Line for packaging
  • Ensure safety standards are being upheld, recording temperatures of food at various stages of the process and adhering to F&F cooling standards
  • Consult with R&D team on scaled recipe testing for bakery products
  • Assist with organization-wide demands of the weekly production cycle, including: labeling and packaging, pro-actively maintaining the F&F standard of cleanliness and organization of our equipment and storage across the facility, and helping coworkers across teams, with an all-hands-on-deck attitude reflective of our We Got You values.

What does a strong applicant for this position have?

  • Proven baking and pastry experience with a comprehensive culinary skill set and expertise in large-scale baking and pastry production with a vision for creating new ideas.
  • Strong leadership skills with a track record of managing kitchen teams and overseeing food production operations.
  • Creative flair and a passion for baking in helping to develop and establish our bakery department.
  • Excellent organizational, communication, and decision-making skills in a fast-paced environment.
  • Demonstrated commitment to high-quality standards, food safety, and precision in culinary arts.
  • Minimum of 5 years in a commercial kitchen environment, with at least 3 years in a management role training teams.
  • Familiarity with commercial kitchen equipment and food safety management practices; Food Safety Manager Certification preferred.
  • Physical ability to lift 50+ lbs and stand for extended periods; flexibility to work overnight shifts.
  • Desire to contribute positively to your coworkers and to the company
